This wine is a first for Shirah: A 100% varietal Cabernet Sauvignon.
A Caberent that is built for cellaring. Extremely low yielding vines at Vogelzang (Under 1.5 tons/acre) produced a very concentrated, tannic wine and Crown Point’s high end viticulture and very small berried Cabernet resulted in a very nervy, high acid wine with a lot of herbal notes . The wines aged in barrel (50% new French oak) for two years. Blending the two really helped both wines with the tannins and acidity uniting and the overall wine displaying a wider array of fruit and herbal notes.
This wine is classic Happy Canyon in that it shows a lot of herbaceousness. The wine is very perfumed, the oak is quite subtle, and quite enjoyable now. With cellaring, we expect the wine to display even more complexity and round out very nicely.

Date Tasted: December, 2020
Nose: Very elegant, Bordelaise notes of peppercorns and capsicum. Floral and perfumed, with high toned fruit including, sour cherries, citrusy blood orange. Melding with darker deeper notes of black currants and leather.
Mouth: Balanced with good acidity and flavors of red cherry, sumac and some dried fruit. Herbaceous and briary, with a young nervy acidity. Lingering subtle integrated oak and toast, with medium + tannin.
